Mexican Chicken Salad

This time of year it is particularly hard to be healthy! I have been so busy that it has been hard to find time to cook during the week which is usually something I always try to make time for. I did not want to eat out (spend money) or do takeout (spend money and eat unhealthfully), so I tried to think what would be easy and healthy to do for dinner. On Tuesday, James suggested Chipotle (what is it with guys and that place?) which was not going to happen, but it did inspire the meal you see above. I went to the store and bought a rotisserie chicken and a few other items and voila a delicious, filling, healthy and carb free dinner!

Mexican Chicken Salad

1 Rotisserie Chicken

Iceberg Lettuce

Can of Black Beans

Monetary Jack and Cheddar Cheese (shredded)


Pico de gallo

Tomato, chopped

Bell Peppers, cut lengthwise

White Onion, cut lengthwise

Jalapeño (if you like a little heat)

Low Fat Sour Cream

I cut up the Rotisserie Chicken and placed it aside on a plate while I prepped the rest of the food. I actually somewhat cheated and bought a Fajita Vegetable Mix that had the peppers, onions and jalapeños already chopped, so I simply sautéed those quickly. I heated up a can of black beans, chopped the tomatoes and shredded the cheeses and then just had to plate the food.
