Herb Salad | what sarah knows

One of my favorite restaurants in NYC is Commerce in the West Village.I don’t usually like salads, but this place has the most amazing 20 Herb Salad and it inspired me to try and recreate something similar at home.

Fresh herbs are great not only because of the flavor they add but for their many healthy benefits. Mint is great for digestion and is a great antioxidant. Parsley is also known for its many nutritional and healing properties. All in all, your getting a lot of bang for you buck with this salad – and it is easy to make and delicious! I love to have this on a Monday night with a something as easy as a turkey burger. Hope you enjoy!

Herb Salad

1/2 large head of romaine lettuce, torn into pieces

1/2 cup chopped fresh flat-leaf parsley

1 scallion (white and green parts), thinly sliced

1/4 cup chopped fresh mint

1/2 large English cucumber, chopped

1/2 pint cherry or grape tomatoes

2 Tablespoons fresh lemon juice

2 Tablespoons extra-virgin olive oil

1/2 Teaspoon finely grated lemon zest

Salt and Ground black Pepper

In a small bowl, whisk together the lemon juice, lemon zest, salt and pepper. Add in the olive oil and whisk until everything is fully incorporated.

Add all the other ingredients to a large bowl and when ready toss with salad dressing. You could also add some toasted pita bread to get a good crunch or some feta cheese.
