Mike Kelley's Ribs

For me, Summer is almost synonymous with the smell of a grill. It makes me so happy. Food blogs and Pinterest are always chock full of phenomenal summer grilling recipes that I sadly rarely get to try out (thanks nyc). Whenever I am in Maine, I jump at the chance to cook in at home and have dinner with my family on the porch. It is so lovely. These Ribs are the recipe of a family friend and they are outrageously good and actually did win an award! I mean how can ribs not be good when they are cooked in beer?

Mike Kelley's Award Winning Ribs

For 2 racks of ribs mix:

8 Tablespoons dark brown sugar
1 Tablespoon salt
1 Tablespoon chili powder
1/2 Teaspoon Black Pepper
1/2 Teaspoon cayenne pepper
1/2 Teaspoon Old Bay
1/2 Teaspoon thyme
1/2 Teaspoon onion powder
2 Dark Beers
BBQ Sauce (I love making Ina’s Homemade BBQ or your favorite store bought brand)

Directions

Rub both sides of ribs with rub mixture and wrap in aluminum foil and fold the foil so you can pour some beer in foil before cooking. Place in refrigerate overnight. Open one end of foil and pour in about a 2 good dark beer. Bake at 250 degrees for 4 hours.
Take out of foil and let cool. Put on grill and brush with barbecue sauce.
