Shrimp Tacos

These shrimp tacos are amazing yet so easy and quick to make it’s a little ridiculous! When I was in South Carolina we went to the country for a few days and had the best time cooking in and relaxing. On the way out of town we stopped at Whole Foods to buy the local wild shrimp for dinner that night. We bought pre-packaged salsa & guacamole at the store, so that after a long car ride we didn’t have to prepare a complicated dinner. This makes the tacos perfect for a weeknight meal! All you need is some good fresh wild shrimp and the rest you can pick up at the grocery store. Proof that a delicious dinner can be made in well under 30 minutes. Bon Appétit!

Ingredients

1 pound wild shrimp, peeled and deveined
butter
old bay
1/4 cup white wine
lemons
salt & pepper
cilantro, for garnish
shredded lettuce
whole wheat tortillas
cotija cheese
Black beans
2 limes, cut into wedges
jalapeños, finely chopped  
guacamole
pico de gallo

Directions

Season Shrimp with salt, pepper & old bay seasoning

Heat a skillet over medium heat for roughly 5 minutes and add a little butter then shrimp to the pan. (I have found butter helps them brown a little better than olive oil)

Cook shrimp no more than two minutes per side and remove shrimp from the pan.

Deglaze pan with white wine and lemon juice and pour over shrimp and serve!

To heat the tortillas place them between slightly damp paper towels and microwave for 30 seconds. Serve with your favorite accouterments!
