Teriyaki Chicken

Detox Teriyaki Chicken | GOOP

I own both of Gwyneth Paltrow’s cookbooks and her second book is by far my favorite. I have found many healthy and delicious recipes and have actually surprised myself with how often I am grabbing for her cookbook. Her recipes also tend to be straightforward and easy to prepare. After a particularly fun but busy weekend, I was in need of a good Monday night recipe – small amount of prep time, healthy but also delicious! This Teriyaki Chicken fits the bill – it is flavorful, doesn’t take too much thought or energy to prepare and if Gwyneth Paltrow is eating it, it’s probably pretty healthy!

‘Detox’ Teriyaki Chicken
Serves 4
for sauce:
1/3 cup balsamic vinegar
1/3 cup agave syrup or raw honey
1 teaspoon freshly grated ginger
1/4 teaspoon freshly ground black pepper
1 teaspoon barley miso ( I used regular)
1 teaspoon mirin
1 tablespoon water
for chicken:
4 chicken breast ( I did think thinly sliced)
detox teriyaki sauce
3 scallion, finely chopped
sprigs cilantro, roughly chopped
 

1. To make the marinade, combine the balsamic, agave, ginger and pepper in a small saucepan. Bring to a boil, lower to a simmer and cook for 10 minutes. Cool and then add the miso, mirin and water.

2. Marinate the chicken in a little over half of the sauce (reserve the rest), for at least 1 hour and as long as overnight.

3. Heat your grill to medium heat. Wipe off any excess marinade and grill the chicken for about 3 to 4 minutes per side, or until cooked through.

4. Serve with the reserved, hasn’t-touched-raw-chicken sauce, cilantro and scallions.
