Three amazing things all brought together here – Bourbon, Banana’s & Bread. On a rainy Sunday morning, I was in need of a fun and delicious project. I was inspired to cook, but not inspired to have to leave my apartment and bother with a grocery store. I spied some perfectly ripe brown bananas and new I could easily whip up a banana bread with the bananas and what I had in my pantry. So easy and delicious and perfect for a lazy morning at home! What would it also be perfect for? Easter Weekend… Make it this weekend and knock everyone’s Easter Socks Off!
3 ripe bananas, smashed
1/3 cup softened or melted butter
3/4 cup light brown sugar
1 egg, beaten
1 teaspoon vanilla
1 tablespoon bourbon (optional)
1 teaspoon baking soda
Pinch of salt
1 teaspoon cinnamon
1/2 teaspoon or 1 nutmeg grated
1 1/2 cups flour
Preheat the oven to 350
With a wooden spoon, mix the butter into the mashed bananas. Mix in the sugar, egg, vanilla and bourbon, then add the spices.
Sprinkle in the baking soda and salt and mix it into the mixture. Last add the flour to the mix. Pour the mixture in a buttered loaf pan. Bake for 45 minutes to one hour. Cool on a rack and then ready to be sliced up & served!
