I love a meal that you can cook at home which doesn’t take too much time, but still delivers a lot of flavor. If you haven’t been able to tell, I am a huge fan of Maya Kaimal sauces, which you can pick up at Whole Foods or William and Sonoma. She has a variety of sauces to choose from and has a suggested recipe on the back, which you can work with or doctor up. Butter Masala is a mild buttery sauce with a little hint of chili that is a crowd pleasing dish. When its cold outside and you want a home cooked meal to warm you up but don’t have the time to put in a lot of work – this is a great option!
2 tablespoons vegetable oil
4 boneless, skinless chicken breast cut into cubes
1 container Maya Kaimal Butter Masala
chopped cilantro (for garnish)
In a medium-sized skillet (that has a cover) or Dutch oven, heat the vegetable oil over medium heat. Add the cubed chicken and brown lightly on all sides.
Add the Butter Masala sauce to the pan and cover. Simmer for 15 minutes over low heat or until chicken is cooked through. You can add a little water to the sauce if you believe it is getting to thick.
I like to serve the chicken over a little brown rice but basmati rice would be fantastic as well. Garnish with cilantro.
