Fresh peaches are something I look forward to every summer. My parents kitchen is stock full of peaches, the state fruit of South Carolina, all summer long with different varieties arriving as summer goes on. I can eat peaches all day long for breakfast, as a snack, for dessert and most definitely in a cocktails. I love to cut up a peach and put it in the bottom of a champagne glass or even puree the peach if I am feelings so inclined. After a particularly long Monday, I was looking for a refreshing summer cocktails with little clean up or hassle. Peaches, Vodka distilled in honey and a splash of club soda – how could that possibly be bad! It is a new favorite. This really is the perfect summer libation – simple, light and refreshing! IngredientsOne ripe peach 2 ounces Barr Hill Vodka, distilled from raw honey Splash of Club Soda Ice
Peel a peach leaving a little bit of the skin on and chop it up into small pieces. Place peaches in a bowl and muddle them. (you can puree it too if you have the time and prefer that thicker consistency)
Add 2 oz of Vodka to the peach mixture and let stand together for at least 30 minutes. You can let them sit together longer if you have the time to allow the two ingredients to get friendly in your glass. (you can infuse for up to a day in advance)
Put ice in a glass and add vodka & peach mixture and top with a splash of club soda. Cheers!*you can always add granulated sugar to sweeten it up *Adding a little mint would be a lovely addition
